My favorite food has got to be BBQ!!

A tender rack of ribs, that fall off the bone when you pick 'em up...or a pulled pork sandwich on texas toast, drenched in sauce...mmmmmmm!!!

But not just the meats, I love all of the fixin's too...cornbread covered in cheese, sweet potato suffle, collard greens, baked beans...

Man I love it!!

In fact I love it sooo much, I'm gonna get Fred Flemmings BBQ to cater my wedding!! laugh.gif

Anyway, here's the start...what do you guys like when you get your grub on?

Mexican food tends to have alot of spicy flavor (Jalepeno's, Chipotle etc.) Where as food from latin countries like DR, PR and Cuba uses alot adobo and sazon in the food.

I enjoy all kinds of foods from around the world....my palate is open like the ocean....you name it, and I've probably ate it...I've eaten Ostrich, Crocodile, and even ground up raw Horse (a delicacy in France)....I like Chinese, Japanese, Mexican, Italian, Greek, Soul, French, Indian...on and on....

I'm a HUGE BBQ fan as well....I always get some kind of combo platter with ribs, pulled pork, and chicken...and I GOTSTA have some good slaw with it......and a sweet tea with lemon to wash it down.

I'm also into spicy foods...but not too spicy...I only like it hot enough to give me a little sweat on my top lip....

I do love some good Sushi/Sashimi/Nigiri too...I probably eat that once a week...


Out of everything though...for the past few years, I'd have to say I've eaten steaks the most....only the best Strips, Ribeyes, and Filets...cooked medium rare, leaning to the rare side....with only a little salt and pepper...

I love me a good steak! Medium rare for the better cuts, medium for the lesser...just salt and pepper huh? What kind of sauce do you eat 'em with?

When it's up to me...it's "Smith and Wollensky's"....they're a famous steakhouse chain that I think originated in New York...they sell a sauce in specialty places like Fresh Market....I might use it on a Strip or Ribeye that's not as good as it looked....other than that...I prefer a good steak pretty much au naturel...kinda bloody...cooked with butter, salt, and pepper...more pepper than salt...

I do prefer horseradish with my Prime Rib though...

Speaking of restaurants...here's a couple of P4P affordable entrees that I order at certain ones....the Cajun Shrimp Alfredo at Red Lobster....and the Chicken Marsala at Carabba's....

Like CEO, I have eaten some funky stuff in my life just for the sake of trying it. You gotta live when you go to all these different countries and learn what the locals actually eat. Raw Impala in Africa might take the cake...

So tough to pick favorite meals or favorite foods...

Per se...Cafe Gray...Nobu...Maze...Aureole...I mean...so many meals from so many places, it is tough to pinpoint something, but ANY of those restaurants are a good meal. Most are in Manhattan, though two I are at in London, and Aureole in Vegas. But man, it feels wrong to just cite a couple restaurants...

That said, I guess French, New American, Sushi...I mean, I love it all...as long as the food is good.

That's how I am though....JD knows me...wherever I'm at...I will ask what they recommend and am willing to try ALMOST any customary or specialty dishes....the horse I regret....and you will never see me eating cockroaches or a baby duck fresh out of the egg...

As far as the best cuisine and the food life from a particular country...I have to say The French are #1.

6 course meals that satisfy....the bread, pate, wine, cheese, and dessert really make a meal an event.

I'll tell you Italian is by far my favorite food. But I don't really like to eat it out too much.

My favorite meal out would have to be sushii. Place in town called Magic Fingers, spectacular stuff.

Back to steaks...for me, my GO TO seasoning is Paul Prudhomme's Seafood Magic! He's got a few different seasoning blends, but Seafood magic IS the best. When I'm in a hurry to grill, I'll dry rub a little of that on, and it's good to go! thumbsup_anim.gif

The seafood magic is also AMAZING on popcorn! A little of that with some pepper and melted better...Oh MAN, forget it!

Method
Like my boys, CEO and JD, I have basically been there and done that...maybe not as completely exotic (no Impala, Horse), but all kinds of birds, reptiles and shit.

LOL @ CEO listing a dish from Red Lobster as one of his all time greats.

JD, my best friend manages Grayz (same owner, Grey Kuntz, as Cafe Gray), and NY prob has the best restaurants, P4P. One of the best things about work is you get to entertain clients and put up $$$$ dinner prints.

All that said, because I like to eat, I do cook a lot.

I can do some kick ass pasta (Marinara sauce based, but can branch it out from there)

Meat is my specialty - I can put it on a rack of ribs (slow cooked for 6 hours, rubbed, sprayed with apples juice...drowned in my specialty bbq sauce). But my best is Steak Florentine, a recipe I picked off in one of my favorite steak joints in Florence, Italy, called Quattro Leoni.

I'll break you fools off, cuz it kicks ass. Cost a little bit, and you'll need to have a nice butcher and food store that sells fresh herbs, but here it is...

Buy yourself a 2 1/2 - 3" thick Porterhouse or or Bone-in Rib-eye (Recipe calls for Porterhouse)
Coarse Salt
Coarse Ground Pepper
Chop up enough of the following fresh herbs to coat both sides of the big steak:

Fresh Basil
Fresh Rosemary
Fresh Thyme
Fresh Oregano
Fresh Sage

Aight, here's the deal - Use a small food processor to chop up them there herbs...fuck chopping all that shit w a knife.

Take the steak, coat it with the best olive oil you got. I pay up for my olive oil (~$50/btl), but I guess that's the Italian in me.

Next coat one side of the steak, as well as the fat layer on the outer portion, with coarse, fresh ground salt & pepper. Take a handful of the combined chopped fresh herbs, and rub one side of the steak and the outter portion with it. Flip the fucker. Repeat the same process with the second side of the steak.

Optional:

In a large frying pan w the heat turned up all the way, flash fry (~ 1 min on each side) the seak to sear in all the juices, etc.

Non-optional:

Stick the steak in your oven (broil) or on the grill. I live in a condo, and had to scrap my $1000 grille (pissed about that), so now I am confined to my oven. In an oven, broil one side of the steak for ~ 12 minutes, flip it, broil the other side for like 9 minutes. Take it out, wrap it up real good in tin foil, and let it sit for 6 minutes (VERY IMPORTANT to let the proteins in the meat loosen up and to be less chewy). Open the tin foil, slice it, and serve. if it's too rare for your liking, and it may be because it's tough to gage the cooking time of a steak that thick, you can just nuke it for 30 seconds.

I usually serve that with fresh sliced tomatoes and sliced fresh mozerella.

That's been my Sunday meal now for a while, although since I live down the street from Prime 112 (a steak joint in Miami Beach), I have just been ordering takeout from there, as it keeps me from having to clean up).

As far as over-the-counter, prepared steak seasonings, I think McCormick's Montreal Steak Seasoning, in both reg and spicy, is tops. I never use it anymore since I started going the fresh herbs, olive oil and salt & pepper route, but it used to be my go-to for grilling.

If you guys want a sick BBQ sauce to use as a base, there's this shit they sell called "Bone Suckin' Sauce" (refrain from comments). I buy that, and then I usually mix in a bunch of other stuff, including, but not limited to, maple syrup, A-1, Worcestershire, etc. The Bone Sucking sauce is kick ass on it's own, but if you want to "trick it out", like I do with mine, it serves as an awesome base.

I don't cook inside...I know I will someday.....but anyway....I'm gonna bold this, print it, and put it on the fridge....lol...my wife's already changed up her steak cookin' style once already (a simple and perfect style for our night life with the rowdy daughter)....but I know that when she gets the chance, she'll hook this up for me....

That's the kinda flavor I like...Mediterranean roots here too with the Greek momma....

I ate at Tao when I was in Vegas last week...it was good, but Nobu poops on Tao. Had the Hamachi jalapeno there too though...

We did NOBU on Thurs night, AGO on Fri nt (which I could care less about, but again, it was in the HardRock so it was free). The night of the fight I was on a liquid diet, and didn't eat. Sun sat out on the 18th Hole of the Country Club at The Wynn and swilled mojitos and mint jullips...went to Daniel Buloud at the Wynn for an early dinner w my lady and my bro, stiffened up the buzz, popped a zannie, and caught the red-eye home.

I been eating sushi for lunch every day for the past 3 weeks (during the week)...dropped 17 lbs. Specifically, hamachi jalepeno.


By the way, I have a kick recipe for steamed mussels too...

Yeah, I eat a lot of sushi. Hamachi is one of the fattier types of sushi there is too...but that shit is so good.

I've tried Bone Suckin sauce before...good stuff. Other over the counter sauces that know how to put it down are Stubbs, Cattlemen's, Sticky Fingers, and Pat's Ho' Made.

Pat's was my sauce in College! A few years ago, Pat's Hos started watering it down...it's not the same as it used to be, but it's still pretty good.

Yeah, Spyder, I use Stubbs too. GREAT Sauce. I usually mix that w the Bone Suckin. Stubbs pork marinade is good too.

I won't lie to you boys, a very hungry Method, when he's trying to make weight and hasn't eaten, has been known to sneak trips to the spice cabinet and the refrigerator door to take handful licks off the sauce racks and pinches of his favorite powder spices...

Spyder, Bone Suckin makes a rub too....and its fucking awesome. I'll take a swig of Stubbs now and again. Crystal hot sauce too. I'm downright grimey, I guess. Crystal is my go to hot sauce for all of the latin food. Awwwwwwwwwwwww man!

I'm thinkin we might have to plan a Fighthype BBQ.

Any of you fuck sticks live on a large farm-like property, where fools could pass out?

Im in Mmiami Beach, and, in the Summer time, it's cheap as fuck to fly to and the accommodations are cheap at that time, but I don't have the capacity to host an outing in a condo, as we couldn't "Q" here.

There are spots here that would host it though, and then there's all kinds of stink box down here to keep y'all occupied.

You guys call it. Anyone have any ideas?

I live on the north shore of Long Island...

Fun town though...plenty of bars, restaurants...shops...on the water...good place for a get together.

I like tacos, burritos, nachos, fajitas, chips and salsa, etc.

Mexican, chinese, thai, italian. Good ol' fashion bacon cheese burger and fries. I love food.

I will try to turn eveything into a burrito. My fiance gives me shit about it. If we are eating eggs, bacon, and potatoes in the morning, I will whip out a tortilla and tapatio sauce and make a breakfast burrito!

I love alot of different foods. I am very partial to bbq just like spyder. Ribs, tri tip, steaks, filet mignon, shrimp. I also love Sushi. It is one of my all time favorite foods despite the fact that would never order a plate of fish at a restraunt.

In the summertime, AC just as hot as Miami.

I've never done Atlantic City.....always wanted to...I think Cotto-Margarito would be an ideal centerpiece for an FH party......but we can go there fight or not....there's other options too....make it a Carolina coastal thing perhaps?....or maybe we could do The Gulf in Destin, FL?....

As of right now...the only obstacle for me is that we're going on vacation for 2 weeks in June...from the 6th to the 20th...it would definitely have to be after that for me...
